Coconut Fish Stew

I am a gastric bypass patient and this recipe is a tasty meal I can have.
Ingredients:
2 lbs white fish fillets (skin on)
2 tablespoons lime juice
1/2 teaspoon salt
12 ounces shrimp (optional)
12 ounces mussels (optional)
1 onion, sliced
1 red pepper, slices (optional)
1/2 teaspoon garlic, minced
4 tablespoons tomato paste
2 cups water
1 cup coconut milk
1 tablespoon hot sauce
3 tablespoons parsley
Directions:
1. Place fish, lime juice and salt in a bowl. Marinate while you continue.
2. Heat the olive oil in a large fry pan and add the onion and garlic. Cook until the onion is softened. Add the marinated fish, tomato paste, water and simmer for about 10 minutes over medium heat, and the fish is cooked through.
3. Mix in the coconut milk, pepper sauce, parsley and simmer for another 5 minutes. This is good as a soup or served over white rice. You can also add shrimp, mussels, etc.
