Yummy, slightly sweet salmon. High Fibre dish!
Ingredients:
1/2 lb salmon
1/2 cup corn flakes
1/4 cup coconut
1 tbsp lime juice
1 cooking spray
1 pinch black pepper
Directions:
1. Marinate salmon in lime juice.
2. Crush corn flakes.
3. Mix cornflakes with coconut and pepper.
4. Lightly spay baking pan and fillets.
5. Press fillets into crust mixture.
6. Bake 425f for 12-15 mins.
7. Serve with your favorite side dish.
