creamed corn with a tropical taste of coconut milk, cilantro and lime with a kick of hot pepper
Ingredients:
4 ears of corn (kernels cut from cob)
1 cup lite coconut milk
1/4 salt
2 tbsp chopped fresh cilantro
1 tbsp lime juice
1/4 tsp crushed red pepper (optional)
Directions:
1. combine corn, coconut milk and salt in a medium saucepan.
2. bring to boil, then adjust heat to maintain a simmer.
3. cook, stirring occasionally until most of coconut milk has evaporated, 12 to 15 minutes.
4. stir in cilantro, lime juice and crushed red pepper if using.
