Coconut Cream Pie

My Mom used to makes this pie for my husband often...its his favorite
Ingredients:
1 9 pastry shell (can use a graham crumb crust)
3t apricot jam (optional)
3/4c sugar
5t flour
1/4tsp salt
2c milk, warmed
3 egg yolks or 2 whole eggs
2t butter
11/2tsp vanilla
11/2c coconut, toasted
Directions:
1. Spread jam over bottom of pie shell, set aside.
2. In a large microwavable bowl whisk together the sugar, flour and salt. Whisk together eggs and milk in a small bowl; gradually add to dry ingredients, whisking away all lumps.
3. Microwave on high untill filling thickens; stir and scrape down sides of bowl a few times.
4. When thickened add the butter, vanilla and about 1cup of the coconut. Cool slightly then pour into prepared pie shell. Cover and chill.
5. To serve top with sweetened cream and remaining coconut
