Coconut Cream Pie

Very Good Pie!
Ingredients:
1 9 inch pie shell
1/4 cup cornstarch
2/3 cup sugar
1/2 teaspoon salt
2 1/2 cups milk
3 eggs, seperated
1 teaspoon vanilla
1 cup flaked coconut
3 -6 tablespoons sugar
Directions:
1. Mix corntarch, sugar, & salt in double boiler top .
2. Slowly pour in milk, cook over boiling water .
3. Stir constantly until thick enough to mold slightly when dropped from spoon .
4. Cover cook 10 minutes longer.
5. Stir a little Hot mixture into egg yolks beaten, then stir all into hot mixture .
6. Cook 2 mins .
7. remove from water, stir in vanilla & 3/4 cup coconut .
8. beat egg whites with remaining sugar .
9. Pour hot mixture into pie crust.
10. top with egg whites .
11. top with 1/4 cup coconut .
12. Bake at 425 for 5 mins to brown top .
