Coconut Cornmeal Pancakes

I found this recipe online & tweaked it to fit my tastes.
Ingredients:
1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 egg, lightly beaten
3/4 cup milk
3/4 cup water
1/2-1 teaspoon coconut extract
1 tablespoon melted butter (or substitute virgin coconut oil)
1 cup grated coconut
Directions:
1. Sift the dry ingredients together in a large bowl.
2. Whisk the egg with the milk and water in another bowl.
3. Pour the egg mixture in with the dry & stir until well blended.
4. Next add the melted butter & coconut extract, stir in the coconut.
5. Cook on a hot griddle as you would normal pancakes.
6. Serve with honey, syrup, or sprinkle with powdered sugar.
