Coconut Cinnamon Pancakes

Ingredients:
1 1/8 cups unbleached flour
1/4 cup unbleached cane sugar
1 teaspoon baking powder
1 egg, beaten
1/2 cup flaked coconut
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/4 cups milk
cooking oil
Directions:
1. Combine flour, sugar and baking powder in a bowl. Add remaining.
2. ingredients. Stir lightly until smooth. Pour 1/4 cup batter onto.
3. an oiled hot griddle or electric frying pan until puffy. Flip.
4. pancake when bubbles are set. Cook until lightly browned. Serve.
5. with hot maple syrup or flavored butter. Makes about 10 pancakes.
