I happened to see this recipe in a cookbook of mine called Waffles by Donna Rathmell German and her other recipes for bread have been fabulous so I was curious to see how good the waffles might be. The combination of chocolate and coconut appealed to me. Read more . Recommend sliced strawberries or bananas on top.
Ingredients:
2 eggs, separated and at room temperature
2 cups all purpose flour
2 teaspoons baking powder
1/4 tsp salt
2/3 cup coconut flakes
1 1/2 cups coconut cream
8 t butter or margarine, melted
2/3 cup of chocolate chips
Directions:
1. Beat the egg white in a bowl until stiff and set aside.
2. Mix together the dry ingredients and set aside.
3. Combine the egg yolk, coconut cream and butter.
4. Add the egg mixture to the dry ingredients and mix until just blended.
5. Add the chocolate chips and fold in with the beaten egg white until just blended.
6. Don't overbeat the batter.
7. Follow the directions for your waffle maker.
8. In the case of my waffle maker the waffles were done in a minutes time.
9. The recipe makes 6 waffles.
10. If you don't have a waffle maker you could also use this batter to make pancakes.
11. Highly recommend adding sliced bananas or strawberries to the top with warmed up maple syrup.
