Coconut Cheese Pie

Another recipe from the Baker's Collection of Riches pullout... This is an easy pie to make.....
Ingredients:
1 1/2 tablespoons butter, softened
2 2/3 cups flaked coconut
4 eggs
2/3 cup sugar
1 package cream cheese (8oz)
3 tablespoons lemon juice
Directions:
1. Spread butter evenly over bottom and sides of s 9 inch pie pan.
2. Press 1 1/3 cups of the coconut into butter, forming a shell.
3. Place 1 cup of the coconut, the eggs sugar, cheese and lemon juice in blender or food processor; blend until smooth, about 1 1/2 minutes.
4. Pour into coconut shell.
5. Sprinkle remaining coconut in a ring around top of and in center of pie.
6. Bake at 325 degrees for 30 minutes.
7. Serve warm or cool.
8. (If coconut on top browns quickly, cover with a circle of aluminum foil.)
