This is an awesome bread recipe that I obtained from a co-worker. It is incredibly moist and incredibly tasty. Enjoy
Ingredients:
3 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups granulated sugar
1 cup vegetable oil
4 eggs lightly beaten
2 teaspoons coconut extract
1 cup buttermilk
1 cup flaked coconut
1 cup chopped walnuts
Directions:
1. Combine flour, baking powder, baking soda and salt then set aside.
2. In a large bowl combine sugar, oil, eggs and coconut extract.
3. Add dry ingredients alternately with buttermilk then stir just until moistened.
4. Fold in coconut and nuts then pour into two greased and floured loaf pans.
5. Bake at 350 for 1 hour then cool 10 minute sin pans before removing wire rack.
6. Cool completely before serving.
