Coconut Basmati Rice

I like this sometimes with fish.
Ingredients:
1 cup basmati rice
1 1/3 cups water
1/2 cup unsweetened coconut milk
1/4 teaspoon turmeric
1/4 teaspoon salt
2 pinches cinnamon, don't over do
Directions:
1. Bring water to a boil, lower heat.
2. Stir in all other ingredients, return to a boil.
3. Lower heat and simmer covered for 15 minutes. Turn off heat. Don't lift cover. Let sit covered for at least another 15 minutes before serving.
