Coconut Banana Bread

My kids love it as cupcakes. The yoghurt and bananas keep it very moist and just sweet enough. Add some walnuts or chocolate chips for fun!
Ingredients:
1 cup sugar
1/2 cup butter, softened
2 eggs
1 1/2 cups mashed ripe bananas
1 teaspoon vanilla
1/2 cup yoghurt
2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 cup coconut
Directions:
1. Preheat oven to 350 F degrees.
2. Cream sugar and butter.
3. Add eggs, beating till light.
4. Stir in bananas, vanilla, and yoghurt.
5. Combine and add flour, baking powder and baking soda.
6. Stir in coconut.
7. Pour batter into greased loaf pan, mini-loaf pans, or muffin tins.
8. Bake for 1 hour or less, depending on pan size.
