Yummy little cookies from Martha Stewart's Everday Food magazine (Issue #7)
Ingredients:
1 cup butter
1/4 cup icing sugar
2 cups flour
1/4 teaspoon salt
2 cups sweetened flaked coconut
Directions:
1. Preheat oven to 350 degrees.
2. Cream butter with icing sugar until fluffy.
3. Mix in flour and salt until they are just combined.
4. Stir in coconut.
5. Roll dough into 1 inch balls and place on cookie sheet.
6. Bake until just starting to brown, about 15-20 minutes.
7. Roll warm cookies in icing sugar.
8. Cool completely and enjoy.
