Alternate layers of coconut cake,vanilla cream and chocolate gnache makes this gateau spectacular and a morsel to devour..another great christtelle Le Ru creation...French Desserts.
Ingredients:
coconut cake
desicated coconut
240g white sugar
3 eggs
filling
175g dark chocolate
80g unsalted butter
50g icing sugar
2 eggs
100g creme fraiche or thickened cream
pinch salt
vanilla butter cream
1 egg yolk
30g white sugar
1 tsp vanilla
1 tbsp cornflour
100ml milk
60g unsalted butter
chocolate ganache
150g dark chocolate cut into peices
100ml fresh cream
Directions:
1. Preheat oven to 180.c and grease a 20x20 cm square baking tin.
2. to make coconut cake,mix coconut,sugar and eggs in a bowl...divide mix into 3 portions.
3. press one portion into prepared tin...bake for 25 mins...remove from tin and leave to cool...repeat with the remaining to portins.
4. to make the chocolate filling,place the chocolate in a pan with butter, heat gently, stirring until melted and well conbined..beat in the icing sugar and mix well. Add the egg yolks and creme fraiche...beat egg whites with a pinch of salt until firm and fold delicately into the chocolate mixture.
5. Prepare chocolate gnache as follows:
6. place chocolate and cream in a saucepan and heat gently, stirring until the chocolate is fully melted and the mixture is creamy...leave to cool slightly.
7. Vanilla Butter cream:
8. mix egg,sugar and vanilla until pale yellow,stir in cornflour...bring milk to the boil in a saucepan,pour over the egg mixture and return to low heat, stirring continuosly for 10 mins or until thick, add butter and mix until smooth...leave to cool and refridgerate.
9. To assemble dessert, place one layer of coconut cake on a serving plate and cover with the chocolate filling. Top with another coconut cake,then cover with the vanilla butter cream...place last layer of coconut cake over the cream, and coat with the chocolate ganache and coconut threads...chill before serving!
