this is another recipe in diabetes and you magazine. This is a great breakfast on the go for little fingers.
Ingredients:
1 1/2 cups bran cereal
1 1/4 cups nonfat milk( i am in the process of making these and i used soymilk)
2 egg whites, slightly beaten
2 tbsp reduced- fat margarine, melted
1 1/4 cups all- purpose flour
3 tbsp unsweetened cocoa powder
1/3 cup splenda
1 tbsp baking soda
Directions:
1. Preheat oven to 400 degrees
2. Line muffin pan with paper liners
3. In a mixing bowl, blend cereal with milk.
4. Stir in egg whites and margarine.
5. Blend in flour, cocoa, sweetener and baking soda
6. Spoon heaping 1/2 cup of batter into each prepared muffin cup
7. Bake in center of oven for 15 to 20 minutes or until muffins are golden brown or toothpick inserted in center comes out clean
8. cool muffins5 minutes in pan then remove to wire rack.
9. can serve warm or cold
