Cocoa Macaroon Muffins

Ingredients:
2 cups flour
1/2 cup sugar
3 tbls cocoa
3 tsp baking powder
1 tsp salt
1 cup milk
1 egg
1/3 cup vegetable oil
1 1/4 cups coconut, divided
1/4 cup eagle brand
1/4 tsp vanilla
Directions:
1. Preheat oven to 400 degrees.
2. Combine flour, sugar, cocoa, baking powder and salt.
3. In another bowl mix the milk, egg and oil.
4. Stir the wet into the dry until just moistened.
5. Mix together 1 cup of the coconut with the Eagle Brand and vanilla.
6. Spoon 2 tbls of the batter into each greased muffin cup or liner.
7. Place 2 tsp of the filling in the center of each. Do not spread.
8. Top with remaining batter.
9. Sprinkle tops with remaining coconut.
10. Bake 20-22 minutes or until a toothpick comes out clean.
11. Cool for 5 minutes in pan then remove to a wire rack.
