This is another cookie that I make for the Christmas season that is a long time favorite. They are extremely rich and chocolate lovers will love them.
Ingredients:
1 cup butter or margarine
2/3 cup granulated sugar
1 tsp vanilla extract
1 2/3 cups unsifted all purpose flour
1/4 cup cocoa
1 cup finely chopped pecans
9 ounce package of chocolate kisses
confectioner sugar
Directions:
1. Preheat oven to 375 degrees.
2. Cream butter or margarine with sugar and vanilla in a large bowl.
3. Combine flour and cocoa.
4. Blend into creamed mixture.
5. Add the nuts.
6. Beat on low speed until well blended.
7. Chill dough for about 1 hour or until firm enough to handle.
8. Shape tablespoon of dough around a kiss, covering completely.
9. Shape into balls and place on an ungreased cookie sheet.
10. Bake at 375 degrees for 10-12 minutes or until set.
11. Cool slightly.
12. Remove to wire rack and cool completely.
13. Roll in confectioners' sugar.
14. Roll in more confectioners' sugar right before serving.
15. Makes about 4 1/2 dozen 1 inch cookies.
