A Colorful healthy fresh mix of greens and beans.
Ingredients:
garbanzo chick peas - 1 can washed drained.
red kidney beans- 1 can washed drained
whole sweet corn kernels -1/2 can drained
dried black raisins-30 nos washed and soaked in water.
pome grante - 1 cup cleaned and seeded from the fruit.
cucumber- 1 peeled and diced.
cherry tomatoes- 15 nos halved.
romaine lettuce leaves - stem removed -7 torn into 1 pieces
mint leaves - 20-25.
pitted green olives with pimento sauce-15 nos
spring onion -2 stalks chopped well.
garlic-1 pod crushed
red bell pepper -1 deseeded and diced.
green bell pepper -1 deseeded and diced.
fresh rose mary or thyme - 2 or 3 sprigs only leaves to be added.
pepper corns- 10-15 crushed.
dressing
white vinegar- 1.5 tbsp
extra virgin olive oil - 10-12 tbsp
sumac powder - 1 tbsp
lemon juice- 6 tbsp
salt as required
balsalmic vinegar- 2 tbsp.
Directions:
1. Mix all the ingredients in a salad bowl.
2. Mix all the dressing ingredients in a bowl and top it on the salad.
3. Toss it well and its ready to serve.
