Clucker Melt

Created for RSC #10. For a treat, try a strip of cooked bacon under the cheese before toasting.
Ingredients:
2 tablespoons mayonnaise
1 teaspoon dijon-style mustard
1 teaspoon maple syrup (or more)
1/2 teaspoon fresh lemon juice
1/8 teaspoon garlic powder
1/4 teaspoon parsley
1 pinch celery seed
salt and pepper
1 tablespoon red onion, chopped very finely
1/4 cup cooked chicken
1/4 cup cheddar cheese, grated
1 whole wheat bun
Directions:
1. Combine first 7 ingredients in a small bowl and mix to combine.
2. Season to taste with salt and pepper.
3. Add onion and chicken and stir to coat evenly.
4. Split bun in half and place on a baking sheet.
5. Divide mixture between the two sides and then top with grated cheese.
6. Bake until cheese melts and chicken mixture bubbles.
7. Allow to cool slightly before eating.
8. Enjoy!
