Delicious healthy oatmeal cookie treats! revised from the back of Old wessex oats recipe
Ingredients:
3 cups gluten-free oats
1 cup whole wheat pastry flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup stevia truvia
1 egg
3/4 cup applesauce
1/2 cup brown rice syrup
butterscotch flavoring
1 teaspoon vanilla
Directions:
1. preheat oven to 375.
2. mix dry ingredients together in medium bowl.
3. blend applesauce and brown rice syrup in large bowl until blended.
4. add egg, vanilla and butterscotch, blend well.
5. slowly add dry ingredients into batter, mixing well.
6. drop teaspoonfuls of batter onto parchment lined cookie sheet.
7. makes 50+ small bite size cookies.
