Claudias Bacon-cheddar Potatoes

I was trying a different recipe and the potatoes didn't turn out right (you were supposed to be able to smash them and have them stick together), so I came up with this one on my own. It was an instant hit with my family.
Ingredients:
5 lb bag of yukon gold potatoes
1 lb bacon
1/4 - 1/2 cup olive oil
4 oz finely grated sharp cheddar cheese
Directions:
1. Boil and cool the Yukon Gold Potatoes.
2. When cool, peel and cube potatoes into about 1/2” cubes.
3. Slice bacon making cuts about ever 1/4 inch across. Separate. Fry in a large skillet. Remove and drain on paper towels.
4. Leaving the bacon grease in the pan, and adding additional olive oil (you want the bottom of the skillet fully covered with a thin layer of grease/oil), fry potatoes on medium-high heat, stirring frequently.
5. When they are browned, add bacon pieces and stir through the potatoes.
6. Remove from heat and sprinkle the cheese evenly over the top of the potatoes.
