Classic Grilled Cheese Sandwiches

This sandwich features the tang of sharp cheddar tempered by the mild, smoothly melting Monterey Jack cheese. Recipe is from Cook's Country.
Ingredients:
1 1/3 cups sharp cheddar cheese, grated
2/3 cup monterey jack cheese, grated
8 slices hearty white bread
4 tablespoons unsalted butter, melted
Directions:
1. Combine cheeses in bowl.
2. Brush top side of each slice of bread with melted butter.
3. Flip 4 slices over, sprinkle with cheese, and compact cheese lightly with hand.
4. Cover with remaining bread slices, buttered side up.
5. Heat large nonstick skillet over medium-low heat for 1 minute.
6. Place 2 sandwiches in pan and weight with round cake pan, pressing lightly.
7. Leave cake pan on top and cook until first side is golden brown, 3-5 minutes.
8. Flip sandwiches, press again with cake pan, and cook until golden brown, about 2 minutes.
9. Repeat with remaining 2 sandwiches.
