With Easter on its way, I had to put this recipe on the site because it is my family's favourite for Christmas, Easter or whenever and I wanted to share it with everyone. It is different from other Cola ham recipes on the site in that it has a lovely sweet crust of brown sugar and bread crumbs which is actually the signature of this dish. Read more . The time I made this ham on our grill (in below temperature weather at Christmas) my family was blown away! If you have a grill with a cover and a temperature gauge, try it that way - you won't believe how much everyone loves it! There is never much for left-overs with this recipe!!
Ingredients:
1 ham, butt end or shoulder (i like the butt because there is more meat)
10 cups coke classic
1 cup brown sugar
1 cup bread crumbs
1/4 cup butter
2 tsp. dry mustard
1 tsp. freshly ground black pepper
Directions:
1. Preheat oven to 350F.
2. If you eat the ham skin, leave it on, if you don't eat it, remove it now.
3. Place the ham in a roasting pan.
4. Add about 1 inch of Coke to the pan.
5. Bake, covered, allowing for 15 minutes per pound.
6. Baste the ham frequently with the Coke.
7. Add more Coke to the roasting pan during the cooking as it evaporates to prevent burning.
8. Turn the ham over 1/2 hour before your baking time ends.
9. Meanwhile make topping:
10. In a medium bowl combine the brown sugar, bread crumbs, butter, mustard, and pepper.
11. After the ham has baked for 15 minutes per pound, remove it from the oven.
12. Carefully press the crumb mixture onto the ham, don't worry if some falls into the liquid in the roaster.
13. Return the ham to the oven, UNCOVERED, for 30 to 40 minutes more, until the coating is golden.
14. Again, don't let the bottom of the roaster dry out - add more Coke if required.
15. Let sit 10 minutes before carving.
16. Sauce:
17. There will be crumb mixture that has fallen into the roaster. Stir that into the liquid in the roaster, pour into a gravy boat and serve as a sauce.
