I just made this for my daddy's birthday because he loves cherries, it was lots of fun to flambe it as well
Ingredients:
425 g pitted black cherries
1 tablespoon caster sugar
1 cinnamon stick
2 teaspoons arrowroot
1 tablespoon water
1/3 cup brandy
Directions:
1. drain cherries, keep syrup.
2. combine syrup sugar and cinnamin in pan.
3. cook stirring until it boils.
4. simmer uncovered without stirring for 2 minutes.
5. strain, discard cinnamon.
6. return syrup to pan.
7. stir in arrowroot and water.
8. cook stirring until boils and thickens slightly.
9. add cherries, stir until heated through.
10. heat brandy, add to sauce.
11. set aflame.
12. serve imediately with ice cream.
