I've tweaked this recipe to get it to my liking. I hope you enjoy. A change from the usual clam dip.
Ingredients:
4 cans minced or chopped clams packed in clam juice (be careful, not all are packed in juice)
1 cup celery, diced
1 small sweet onion, chopped
8 ounces bacon, cooked and crumbled
4 tablespoons butter
1 sleeve ritz crackers, crushed
1 small green bell pepper, chopped
Directions:
1. Drain two cans clams, reserving juice.
2. Drain second two cans of clams and discard juice or save for another use.
3. In skillet, saute onion, green pepper and celery in butter until softened.
4. Combine with remaining ingredients including reserved clam juice.
5. Spoon into shallow casserole.
6. Bake at 350 degrees for 30 to 45 minutes or until browned and bubbly.
7. Serve with crackers.
