I have not made this recipe but my sister has and says it is wonderful. I purchased it from an estate sale a few years back and this one caught her eye. Hope you enjoy as much as she does.
Ingredients:
2 dozen clams chopped
1 teaspoon salt
1 quart milk
2 teaspoons freshly ground black pepper
1 small white onion chopped
3 tablespoons butter
6 stalks celery chopped
1 cup heavy whipping cream whipped
chopped parsley
Directions:
1. Put chopped clam pieces in large soup kettle with their own liquid or juice and bring to a quick boil.
2. In a separate pot scald the milk with the onion and celery in it.
3. Let this mixture simmer for 5 minutes and then strain off the milk.
4. Add the milk to the clams in the kettle just before serving.
5. Do this gradually so the milk will not curdle.
6. Season to taste with salt and pepper.
7. Put small piece of butter in each cup before serving.
8. Garnish with whipped cream and finely chopped parsley.
