This was a last minute addition to my list of appetizers for an after work gathering. I was looking for a clam roll up recipe but could not find one anywhere, so I had to create my own. A recipe request that evening led me to write it down before I forgot. Read more . They are quick and easy to prepare and the filling can be made the day before.
Ingredients:
1/2 pkg. (250 gram) cream cheese, softened
1 shallot, chopped
1/3 c. (approximately) kraft light three cheese ranch dressing
2-3 tablespoons miracle whip (or more if necessary to give a nice creamy consistency)
1 small carrot, sliced
1 celery stalk, sliced
1 (500 ml. jar) bar clams, drained. reserve about 1-2 tablespoons of clam juice to add to mixture. freshly ground black pepper to taste
5-6 large tortillas
Directions:
1. Put all ingredients, except tortillas, (Yes, that should be obvious.) into food processor and process until smooth. Spread mixture over tortillas. Roll and slice. Refrigerate until chilled. Enjoy!
