spicy beans with crunchy vegetables and cheese
Ingredients:
1 cup pinto beans, cooked without salt
1/2 cup salsa
2 tablespoons minced green pepper
2 tablespoons minced red onion
1/4 teaspoon hot sauce
3 tablespoons cheese
Directions:
1. Mash the pinto beans with the tines of a fork. Stir in the pepper, onion, salsa and hot sauce. Spread the cheese on top. Microwave for one minute. Serve with tortillas or raw vegetables.
