A classic French dish of fresh peas steamed on lettuce leaves, with a touch of butter
Ingredients:
1 pounds fresh peas, shelled
8 lettuce leaves
1 tbs butter
1/2 tsp salt
1/4 tsp pepper
Directions:
1. Remove the peas from their pods to yield 1 pound of shelled peas. Coarsly chop and wash the lettuce leaves and drain. It should be slightly wet.
2. Place the lettuce in the bottom of a heavy saucepan and put the peas on top. Add the butter
3. Place over medium low heat, covered until the lettuce wilts and gives off water.
4. Cook on low until the peas are tender
5. Season with salt and pepper and serve
