Pizza style eggplant. You may add pizza toppings of your choice, adding the calories for each addition
Ingredients:
1 pound eggplant
1 cup tomato sauce
4 ounces part skim mozzarella
2 tablespoons olive oil
1/4 tsp dry oregano
Directions:
1. Slice the eggplant 1/2 thick and arrange, overlapping, on a pizza pan that has been sprayed with PAM
2. Drizzle or brush with olive oil
3. Top with tomato sauce, cheese, and sprinkle on the oregano
4. Bake at 475 f for 20 minutes or until the eggplant is cooked and the cheese is bubbling and beginning to brown.
