Claire's Curried Chickpeas & Spinach with Tomatoes

spicy and filling. Season to taste with garam masala or curry powder, or you favorite combination of Indian spices.
Ingredients:
1 1/2 cups chickpeas, cooked
1 1/2 cups tomatoes, diced
1 onion
1 tbs olive oil
4 cups spinach, raw
1 cup cauliflower, chopped
Directions:
1. saute the onions in olive oil
2. add garlic
3. season with garam masala or curry powder
4. add all the other ingredients
5. simmer covered until vegetables are tender
