This is the Toffee recipe I've been using for years. I usually double this recipe and make 2-3 batches at Christmas. I am not sure where this recipe came from, but it is one of my most requested treats I make during the holidays.
Ingredients:
1 cup butter
1 cup white sugar
2 tablespoons water
1 tablespoon light corn syrup
3/4 cup finely chopped walnuts
1 cup semi-sweet chocolate chips
1/4 cup finely chopped walnuts
Directions:
1. In 2 quart heavy saucepan melt butter. Remove from heat and add sugar. Stir well until blended.
2. Return to low heat, stir rapidly until reaching a rolling boil.
3. Add water and corn syrup, mix well.
4. Stir and cook over low heat to soft crack stage. (290 degrees F)(usually takes 40-60 minutes).
5. Remove from heat and add 3/4 cup nuts all at once. Mix well, then pour into lightly buttered 13 x 9 foil lined pan. (If doubling recipe you can just lay a piece of foil out on the counter or use a large rimmed cookie sheet lined with foil).
6. Quickly spread with metal spatula.
7. Let cool for 5-7 minutes.
8. Sprinkle with chocolate chips, and spread evenly after they begin to melt.
9. Top with 1/4 cup finely chopped Walnuts.
10. Let cool completely and crack into pieces.
