This is a California Citrus Salad loaded with walnuts and good stuff.....and includes citrus in the dressing for all around nutrition and taste and tastes good in any city.
Ingredients:
3/4 cup chopped walnuts
3 cups bow tie pasta
1 cup smoked cheese such as gouda
1 cup celery and cut thin in diagonal slices
1/3 cup finely chopped red onion
3 tablespoons fresh chives
2 tablespoons chopped fresh parseley
dressing
1/3 cup fresh orange juice
1/4 cup fresh lemon
4 tablespoons evoo extra virgin olive oil
1 tablespoon stone ground mustard
ground pepper to taste
2 teaspoons rice vinegar
Directions:
1. Here we go
2. Place walnuts on a cookie sheet and bake for about eight to ten minutes. This makes salad terrific...
3. cook pasta according to directions
4. Put dressing ingredients in a large bowl and use whisk to blend
5. Add pasta, cheese, celery, red onion, walnuts, chives and parsely to the dressing mix and serve.
6. If you want to you can add chicken if you are not a vegetarian....
7. I eat it without chicken but it goes with chicken, too....
8. Enjoy this light and yummy salad loaded with good stuff.
