Ingredients:
3/4 cup(s) walnuts chopped
3 cup(s) bow tie pasta (farfalle)
2 cup(s) cooked chicken (use rotisserie) shredded
1 cup(s) smoked cheese, gouda cut in 1/4 inch cubes
1 cup(s) celery cut in thin diagonal slices
1/3 cup(s) red onion finely chopped
3 tablespoon(s) fresh chives chopped
2 tablespoon(s) fresh parsley chopped
1/3 cup(s) fresh orange juice
1/4 cup(s) fresh lemon juice
4 tablespoon(s) extra virgin olive oil
1 tablespoon(s) stone ground mustard
2 teaspoon(s) sugar
1-1/4 teaspoon(s) salt
1/2 teaspoon(s) freshly ground black pepper
2 teaspoon(s) rice vinegar
Directions:
1. The dressing is ingredients orange juice through rice vinegar.
2. Preheat oven to 350 degrees.
3. Place walnuts on a cookie sheet in a single layer and bake for 8-10 minutes, checking frequently. Let cool.
4. Cook pasta according to directions. Drain and let cool completely.
5. To prepare the dressing, combine all ingredients in a large bowl, stirring with a whisk to blend.
6. Add pasta, chicken, cheese, celery, red onion, walnuts, chives and parsley to the dressing; toss gently to combine. Makes 6 servings.
