Citrus Shrimp & Toasted Couscous Salad

Make it Ahead of Time! Super Easy!
Ingredients:
12 ounces toasted couscous
1 lb medium shrimp, peeled and deveined
1/2 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup extra virgin olive oil
1/2 cup scallion, chopped
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
1/2 cup chopped red onion
1 cup halved cherry tomatoes
1 dash salt, to taste
1 dash fresh ground black pepper
Directions:
1. Cook couscous according to package, then rinse with cold water and drain.
2. Steam Shrimp until hot through in Zip N Steam Bag, approximately 5 minutes.
3. Whisk the remaining lemon juice, lime juice and olive oil together in a large bowl.
4. Mix in the couscous, shrimp, herbs, onion and tomatoes.
5. Season with salt and pepper to taste. Chill and serve cold.
