Ingredients:
8 large shrimp, peeled, butterflied, and tails removed
1 cucumber, peeled and chopped
1 pink grapefruit, peeled and sliced
1 lime, peeled and sliced
4 teaspoons fresh cilantro, minced
1 avocado, cubed
Directions:
1. Combine all ingredients in a small bowl; marinate for 10 minutes. Distribute evenly into 4 chilled martini glasses; serve.
