A really different sweet hot salsa with a variety of citrus and avocado. tasty as appetizer or on fish!
Ingredients:
1 ruby grapefruit
1 honey tangerine (or clementine)
1 valencia or navel orange
1 blood orange
1 meyer lemon (if you can get or a regular is ok)
1 lime
1 ripe avocado
6 kumquats, minced
1 fresh red hot chili, rinsed, seeded and minced
2 tablespoons fresh chopped mint
1/2 teaspoon salt
Directions:
1. Peel, seed and segment all the citrus fruit into 1/2 inch cubes, discarding membranes.
2. Pit, peel and dice avocado.
3. In a bowl, gently mix citrus cubes, avocado, kumquats, chili, mint and salt.
4. Tasty as appetizer or on fish!
