This is a very refreshing salad that I eat all year long. I got this recipe from a church friend several years ago. I never get tired of it. Enjoy
Ingredients:
1/4 cup olive oil
2 tablespoons granulated sugar
1 teaspoon finely shredded lemon peel
1 tablespoon lemon juice
1/4 teaspoon salt
3 large oranges peeled and sectioned
1 large pink grapefruit peeled and sectioned
1 medium green onion sliced
1 tablespoon snipped fresh mint
4 cups shredded romaine lettuce
Directions:
1. Combine oil, sugar, lemon peel, lemon juice and salt in a jar then cover and shake well.
2. In a medium bowl place orange and grapefruit sections, onion and mint.
3. Pour dressing over and toss gently then cover and refrigerate several hours.
4. Put romaine in large bowl and top with fruit mixture then toss lightly and serve immediately.
