Citrus-Ginger Ice (Granita)

A refreshing slightly tart Ice that is great on a hot day. **Timing does not include 3 hours freezing time.**
Ingredients:
3 1/2 cups water
1 1/2 cups splenda granular or 1 1/2 cups sugar
1/8 cup gingerroot, peeled and minced
2 teaspoons orange rind, grated
1/3 cup orange juice
2 tablespoons lemon juice
Directions:
1. Combine water, Splenda/sugar, gingerroot, and orange rind in medium sucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Reduce heat and simmer 7 to 10 minutes.
2. Cool to room temperature.
3. Strain through sieve to remove ginger pieces. Stir in orange juice and lemon juice.
4. Pour into a large freezer proof container, and put into the freezer.
5. Every 15 minutes, for 2 hours, take out of the freezer and mix it up.
6. Then scrape with fork 30 minutes during the third hour until the granita appears grainy and the crystals have been broken down. It should resemble snow or coarse sand.
