A nice easy chicken dish that everyone I've made it for loves! A little sweet and a little tangy at the same time. I usually serve it with rice.
Ingredients:
2 boneless skinless chicken breast halves, pounded and sliced into fingers
1 cup flour, seasoned for coating (salt, pepper & garlic powder to taste)
2 tablespoons extra virgin olive oil, to coat pan
1 cup chinese duck sauce
1 lemon, juice of
1 (14 1/2 ounce) can low sodium chicken broth
Directions:
1. Place seasoned flour in ziplock bag - add chicken, zip and shake to coat.
2. Heat oil in pan and brown chicken on both sides on medium heat.
3. Remove chicken from pan and stir in duck sauce and lemon juice.
4. Stir in chicken broth until desired thickness.
5. Reduce heat and return chicken to pan and turn to coat with sauce.
6. Cover and let simmer for 10 minutes and enjoy!
