Light and sunny, this chicken is a great quick-fix dinner. The leftovers can be sliced onto salads and used in pocket sandwiches with watercress and orange slices. This recipe is featured in the book The Origins Diet .
Ingredients:
1 tablespoon olive oil
1 teaspoon fresh lemon juice
1 teaspoon fresh lime juice
2 teaspoons fresh orange juice
1 1/2 teaspoons finely chopped fresh rosemary
salt and pepper
4 boneless skinless chicken breasts
Directions:
1. Heat oven to 375 degrees F.
2. Mix all ingredients, except the chicken.
3. Place the chicken in a shallow roasting pan.
4. Rub mixture on both sides of poultry.
5. Bake uncovered 10 minutes on each side, brushing with marinade when turned.
6. Cook 20 to 30 minutes, until no longer pink.
