Ingredients:
1 can(s) (15 1/2 oz) great northern beans, rinsed & drained
1 can(s) (15 1/2 oz) red kidney bean, rinsed & drained
1/4 cup(s) balsamic vinegar
1.5 cup(s) finely shredded carrots
1/3 cup(s) fresh parsley chopped
1/3 cup(s) green bell pepper, chopped
12 whole(s) lettuce leaves
3 whole(s) navel oranges, peeled, sliced & membranes removed
1 pinch(s) salt & pepper to taste
1/4 cup(s) sugar (equal spoonful)
1/3 cup(s) tarragon white wine vinegar
Directions:
1. Combine oranges, carrots, kidney beans & great northern beans in a large non-metallic bowl. Cover & chill.
2. Combine remaining ingredients in a medium bowl, stir well.
3. Pour dressing into orange-vegetable mixture. Add salt & pepper to taste. Let stand to blend flavors. Keep refrigerated until ready to serve.
4. Serve over lettuce leaves on individual plates.
