Citrus and Cinnamon Couscous

I got this recipe from My Yahoo, if you can believe that! It sounds delicious! Use the leftover salad in a pita bread as a sandwich! MMMMM!
Ingredients:
1 3/4 cups couscous
1/4 cup orange juice concentrate
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon cinnamon
salt
2 1/2 cups boiling water
1/2 cup chopped parsley
1/2 cup chopped green onion
1/2 cup chopped mint
pepper
2 large navel oranges, diced
Directions:
1. Put couscous, juice concentrate, lemon juice, olive oil, cinnamon and salt to taste in a large mixing bowl and stir.
2. Add boiling water, stir to mix and cover.
3. Allow to rest about 10 minutes, or until all water is absorbed.
4. Fluff with a fork.
5. Stir in greens and pepper to taste.
6. Add oranges and toss to mix.
7. Serve at room temperature.
