Cinnamon Zucchini Blondies

A sweet treat that uses up some of that extra zucchini from the garden. I just coarsely chop the zucchini, but you can shred it if you prefer.
Ingredients:
1/3 cup margarine, softened (or butter)
1 cup dark brown sugar, firmly packed
1 egg
1 1/2 teaspoons vanilla
1 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup zucchini, chopped
1/2 cup nuts, chopped (i like pecans)
Directions:
1. Pre-heat oven to 350°F.
2. Grease and flour a 8x8-inch baking pan.
3. In a large bowl, beat margarine and sugar until fluffy.
4. Add egg and vanilla; beat well.
5. Add dry ingredients and stir, just until moistened.
6. Stir in zucchini and nuts.
7. Pour into pan and bake 25 minutes.
8. Cool in pan.
9. Cut into 9 bars.
