A simple, easy and delicious German and Swiss Christmas cookie from Oetker Baking is Fun. The weight measurements are how the original recipe was written. If you have a kitchen scale, I find it to be the quickest and most accurate way of measuring ingredient. NOTE: 1 package of Oetker vanilla sugar is equivalent to 1 to 2 tsp vanilla extract.
Ingredients:
3 egg whites
250 g sugar (1 1/4 cups)
9 g oetker vanilla sugar (1 pkg)
4 -8 g cinnamon (1-2 tsp)
350 g ground almonds (3 1/2 cups)
icing sugar
Directions:
1. Preheat oven to 300°F.
2. Grease a cookie sheet.
3. Beat egg whites until they form soft peaks.
4. Gradually add the sugar and vanilla sugar, beating until they form stiff peaks.
5. Set aside 50 ml (1/4 cup) of the egg white mixture.
6. Fold cinnamon and almonds into remaining mixture.
7. Work all ingredients together quickly to make a smooth dough.
8. Roll out the dough on a surface that has been dusted with icing sugar to a thickness of 6 mm (1/4 inch).
9. Cut out stars with a cookie cutter, rinsing it frequently with hot water.
10. Brush the reserved egg white mixture on the stars.
11. Place stars on the prepared cookie sheet.
12. Bake on the middle rack for 20 minutes.
13. Store in an airtight container.
