Cinnamon Rice Pudding

Ingredients:
1 c uncooked jasmine rice
3c milk
1/2 c sugar
1 cinnamon stick
1 tsp vanilla
1/2 c heavy whipping cream (whipped)
Directions:
1. Cook rice to package directions.
2. Stir in milk, sugar and cinnamon stick.
3. Bring to boil then simmer uncovered for approx. 25 minutes or until thick and creamy, stirring occasionally.
4. Discard cinnamon stick.
5. Cool.
6. Stir in vanilla.
7. Fold in whipped cream.
8. Serve or refrigerate.
