This week's muffin is not the most experimental but they are simple and delicious! And who doesn't love a good cinnamon raisin combo?
Ingredients:
2 c. whole wheat flour
3/4 tsp. baking soda
1/2 tsp. salt
1/4 c. light brown sugar
1/4 c. honey
2 eggs
1/3 c. olive oil
1 c. applesauce
1 tsp. vanilla
4 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. raisins
Directions:
1. Pour all ingredients into large bowl, except raisins.
2. Stir until well blended.
3. Stir in raisins.
4. Spoon into paper lined muffin trays
5. Bake at 350 F for 15 min.
6. **Makes 1 dozen.
