Cinnamon Oatmeal Breakfast Pudding

What a way to oomph up your breakfast cereal - you can use fresh fruit on top also - soooo good!!
Ingredients:
2 cups water
1/4 teaspoon salt
4 eggs
1/4 cup 2% low-fat milk
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1 1/4 cups quick-cooking oats (not instant)
1 1/3 cups 2% low-fat milk
1/4 cup dried cranberries (optional) or 1/4 cup raisins (optional)
4 teaspoons granulated sugar
Directions:
1. Bring water and salt to a boil in medium saucepan over high heat. Whisk together eggs, 1/4 cup milk, cinnamon and vanilla in medium bowl; stir into boiling water.
2. Reduce heat to medium-low. Stir in oats. Simmer until desired consistency, about 5-6 minutes, stirring occasionally.
3. Spoon into bowls; top each servng with milk cranberries and sugar.
