Ingredients:
1/2 cup packed brown sugar
1/4 cup margarine
1 egg
3/4 cup pineapple juice
1 teaspoon orange zest
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 cup raisins
Directions:
1. Beat sugar and margarine until fluffy.
2. Beat in egg, pineapple juice and orange peel.
3. Combine remaining ingredients and stir into juice mixture just until moistened.
4. Spoon batter into muffin cups coated with non-stick spray.
5. Bake at 375 degrees about 15 minutes or until toothpick inserted into center comes out clean.
