Cinnamon Ice Cream

I scream, you scream, we all scream for ice cream! What a great ice cream...just enough cinnamon to give it, it's unique flavor....
Ingredients:
1 cup white sugar
1 1/2 cups half and half cream
2 eggs, beaten
1 cup heavy cream
1 tea. vanilla extract
2 tea. ground cinnamon
Directions:
1. In a saucepan over medium low heat, stir together the sugar and half and half.
2. When this begins to simmer, remove from heat, and whisk half of the mixture into the eggs.
3. Whisk quickly so that the eggs do not scrample.
4. Pour the egg mixture back into the saucepan, and stir in the heavy cream
5. Continue cooking over medium low heat, stir constantly until the mixture is thick enough to coat the back of a metal spoon
6. Remove from heat, whisk in vanilla and cinnamon
7. Set aside to cool
8. Pour cooled mixture into and ice cream maker and freeze according to your machines instructions.
